Today on my America Weekend show, I talked with Saru Jayaraman, author of “Behind The Kitchen Door,” an expose on the poor working conditions and low wages the overwhelming majority of restaurant employees have to deal with. I asked her how long it’s been since workers in that industry got a raise, how it’s unfair to make them rely on a subsidy from customers (in the form of tips) for their income, and what the evidence shows regarding the impact of a minimum wage increase on the cost of dining out.
